today is cristo's very first birthday and i want to make him something special but i dont know what anyone have a yummy recipe that could substitute as a birthday cake? lol

Happy Hatchday Cristo!! Sorry, but I don't have any recipes Amanda. I've never been much of a chef/baker/etc.. Maybe there's something quick and simple here in the 'Recipes' section. |

BANANA NUT WHEAT MUFFINS 2 C. whole wheat flour 1/2 C Sugar 1 tsp baking powder 1 tsp baking soda 1/4 tsp salt 3/4 C mashed bananas 1/2 C chopped nuts 2 eggs with shells 1/2 C vegetable oil water Preheat over to 375*F. Mixx all the dry ingredients together in a large bowl. In a food processor, mix eggs, oil, and bananas together. Add the dry ingredients and continue to process for a minute or more. Add water if needed. Spoon mixture into lines muffpin cups. Bake for 30-35 minutes or until a toothpick comes out clean. |

BLUEBERRY ALMOND MUFFINS 1 C blueberries 1/2 C chopped almonds 1 1/4 C flour 1 C whole wheat flour 1 C yogurt (always use yogurt with live cultures, best for the birds) 4 eggs with shells 2 Tbs. margarine 1/2 C sugar 1 tsp baking soda 1 Tbs baking powder 1 pinch salt Preheat oven to 375*F In a large bowl, blend flour, baking soda, baking powder, and salt. In another bowl, beat together the eggs, yogurt, sugar and margarine. Mix two bowls together. Mix until well blended. Fold in the blueberries and the almonds. Spoon the mixture into the greased or lined muffin tins. Bake for 30-35 minutes or until done. |
