We LOVE red or black beans and rice at our house but the boxed mixes are pretty high in sodium and I don't want to feed that to her. I would like to create my own mixture that has a similar flavor without all the salt. Thanks! Autumn

I hope my little nut-heads love it! I am looking for healthy yummies for them that taste good to them, won't break my wallet, and are healthy. Since I already had most of this on hand, I made up a quick batch this morning, cooking it tonight, and serving it tomorrow evening. I hope they like it!
