Your second question depends on two things: how many flyers do you want and how much money do you have to spend? If you use a lot of flyers, units vulnerable to arrows that cannot exploit terrain along with an archetypal weakness (low CON), you might end up hurting yourself at times. Then again, the knights have high evade and the only one that has dodging troubles in the group is Fiora, plus they basically get an automatic critical from a triangle attack. Farina's high cost is another turnoff of using all three pegasai. If you've got money and don't mind using flyers, you might be wise to use them all.
