The changes in each are minor, and they were made to reflect the way the characters in the games look a little more, being the male sage sprite looks more like Pent, the female sniper looks like Louise, etc. The animations themselves are exactly the same, too. Also, if anything, you should be saying that FE8 had superior palettes to both FE6 and FE7, because the latter-mentioned two use roughly the same palettes. The darker tones weren't used until FE8. This is a ridiculous argument however. Unless you vomit at all three games, it just plain doesn't make sense.
