SO WHAT!!

Whisk 3 eggs into just under half a pint of milk..(I never measure/weigh anything)
and some salt and pepper to taste..then gently fold in plain flour..It must be plain flour..you want the consistency of pouring custard..always remember you can add in but can't take out..so do the flour a bit at a time till its as thick as custard..

Then leave it for at least an hour..the eggs and flour will react together..don't be tempted to whisk it again until it is about to go in the oven..

I use a 12 deep bun tray to cook mine in..

Put some fat in the tray and place it in a hot oven..when the fat starts to spit..give your mix a good whisk..take the tray from the oven..and pour in the mix as quickly as you can..keeping the oven door closed to retain its heat..once back in the oven leave for 20/25 mins..don't open the door during this time..or they'll drop..
