But since she saw, you know, a dead body, her brain probably wasn't working at full capacity (kind of hard when a killer's on your tail, unfortunately) and just presumed it was her, thus OHMYGODICAN'TBELIEVEIT'SBETH.

Despite the fact that Beth has been known to make bad choices (Yes, it's perfectly plausible to hide in an underground wine cellar with a serial killer on the loose, when there's no way out if he does find you :/), she could have just dropped it and got so scared that she hightailed it...

I guess Human just went with "it's Beth's ring so it must be her's" to keep it simple.
