This is one of my favorites...and so DAMN easy! LOL! All you need is a blender and a pie plate, of course an oven and ingredients too! Coconut Impossible Pie (the title is a joke :D ) 1/2 stick of butter 4 eggs 1 tsp. vanilla 1 cup coconut 2 cups of milk 1/2 cup of granulated sugar 1/2 cup of Bisquick (all purpose baking mix) Put ALL of the ingredients into your blender. Blend until mixed well. Pour mixture into your UNGREASED pie plate and bake at 350 for 45 minutes. Adjust the time for your oven. The Bisquick settles and makes a soft silky crust, then the custard layer and then a layer of coconut...its delicious, if you like coconut...lol! Thats All Folks...Easy as Pie....[/size]
