I'm going to post three of my favorite xmas cookies. Here's the first: These are fun and people love them because you can't tell until you bite into them- you get a nice surprise of a chocolate kiss. This is an old recipe from my Hershey Make it Chocolate book- so you can now add varity by using different kinds of kisses: [size=7]Cocoa KISS Cookies[/size] 1 cup butter or margarine, softener 2/3 cup sugar 1 teaspoon vanilla extract 1 2/3 cups all-purpose flour 1/4 cup HERSHEY's cocoa (any cocoa is good) 1 cup finely chopped pecans 54 HERSHEY's KISSES (one 9 oz pachage) unwrapped Confectioner's sugar In large mixer bowl cream butter, sugar & vanilla until light and fluffy. Combine flour & cocoa in a separate bowl blend into creamed mixture Add nuts beat at low speed until well blended Chill dough 1 hour or until firm enough to handle Heat oven to 375 degrees Mold scant tablespoon of dough around each unwrapped KISS, covering KISS completely. You don't need to over-do it here because it's a very rich cookie Shape into balls place on ungreased cookie sheet Bake 10-12 minutes or until set Cool slightly Remove from cookie sheet onto wire rack Cool completely. Roll in confectioner's sugar Makes about 4 1/2 dozen cookies. |
