Now this one is one my request list every year- people love this brittle and it's really easy to make. This one comes from my Mrs Fields Cookie Book: Macadamia Nut Brittle 1 1/2 cups (9oz) whole macadamia nuts 6 Tablespoons salted butter 1 cup sugar 1/4 cup water 1/4 teaspoon baking soda 1 teaspoon pure vanilla extract Lightly grease a 9 x 13 inch glass baking dish (ok - the size isn't that important-but glass is. The smaller the baking dish-the thicker the brittle) Equally distribute macadamia nute over bottom of dish Set aside/ In a heavy 2 quart saucepan, combine butter, sugar & water. Place over medium heat & stir with a wooden spoon until sugar dissolves. Let pan stand covered for 2 minutes. Uncover pan & increase heat to high. Continue cooking without stirring until mixture begins to turn a golden brown. Quickly remove from heat; stir in baking soda & vanilla extract. Pour immediately over macadamia nutes in prepared baking dish. Spread with a wodden spoon. Cool to room temperature. Break into irregular-sized pieces. Store in an airtight container. |
