I am determined to get into (not squeeze into) those cute little clam diggers I bout the other weekend! I just need to step away from all of the yummy snack stuff and treats, but easier said than done. That said, I made a really yummy (and not so naughty) "Key Lime" pie over the weekend. Ok, so it's not really "Key Lime" bit it's close, and I can feel like I'm indulging in something forbidden without the guilt. Anyway, I'm putting the recipe here as opposed to the recipe section, because it's good for those of us wanting/needing to be good.
KEY LIME PIE

Graham cracker crust for a 9" deep dish pie

1-1/3 cups boiling water
1 package Jello sugar-free lime, 8 serving size
1 cup cold water
ice cubes
2 - 3 tsp. lime zest
juice of 1 lime
1 16-oz container Cool Whip Free

Mix gelatin and boiling water until gelatin is dissolved. Add enough ice and water to make two cups, and mix into gelatin until ice has completely melted. Fold in the thawed cool whip. Cool in fridge for an hour or so - until spoonfulls are somewhat stiff. Then spoon into crust. Chill until completely set - about three more hours. Enjoy!
