PEANUT BUTTER BLOSSOMS AKA THUMBPRINTS

Ingredients
1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
3/4 cup peanut butter
2 cups packaged biscuit mix
1 teaspoon vanilla extract
1/3 cup sugar
65 solid milk chocolate candy pieces, unwrapped
Instructions
Preheat oven to 375°F. In large bowl, beat EAGLE BRAND® and peanut butter until smooth. Add biscuit mix and vanilla; mix well.
Shape into 1-inch balls. Roll in sugar. Place 2 inches apart on ungreased baking sheets.
Bake 6 to 8 minutes or until lightly browned around edges (do not overbake). Immediately press a chocolate candy piece in center of each cookie. Cool. Store leftovers tightly covered at room temperature

This is the easiest fudge recipe I've ever used and it's good too.


FIVE MINUTE FUDGE

1 12-ounce package semisweet chocolate pieces (2 cups)
2/3 cup sweetened condensed milk (one-half of a 14-ounce can)
1 tablespoon water
3/4 cup chopped walnuts, toasted if desired
1 teaspoon vanilla

Directions
Line a cookie sheet with waxed paper; set aside. In a medium microwave-safe bowl, combine chocolate pieces, sweetened condensed milk, and water.

Microwave, uncovered, on 100% power (high) for 1 minute; stir. Microwave about 1 minute more, or until chocolate is melted and mixture is smooth, stirring every 30 seconds. Stir in nuts and vanilla. Pour mixture onto prepared cookie sheet and spread it into a 9x6-inch rectangle, or drop mixture by rounded teaspoons onto prepared cookie sheet.

Chill fudge about 30 minutes or until firm. Cut fudge into 1-1/2-inch squares. Makes 24 pieces

[size=7]So glad we have a dessert/baking thread Donna! I can't cook but I can bake! This is one of my favorites...and so DAMN easy! LOL! All you need is a blender and a pie plate, of course an oven and ingredients too!

Coconut Impossible Pie (the title is a joke :D )

1/2 stick of butter
4 eggs
1 tsp. vanilla
1 cup coconut
2 cups of milk
1/2 cup of granulated sugar
1/2 cup of Bisquick (all purpose baking mix)

Put ALL of the ingredients into your blender. Blend until mixed well. Pour mixture into your UNGREASED pie plate and bake at 350 for 45 minutes. Adjust the time for your oven.

The Bisquick settles and makes a soft silky crust, then the custard layer and then a layer of coconut...its delicious, if you like coconut...lol!

Thats All Folks...Easy as Pie....[/size]

[size=1]Cranberry White Chocolate Chip Shortbread Cookies

2 cups butter or margarine
4 cups flour
1 1/2 cups dried cranberries
1 cup sugar
6 squares white chocolate chopped

Preheat oven to 350. Beat butter and sugar in large bowl with mixer on medium speed until light and fluffy. Add flour. Mix well. Stir in chopped chocolate and cranberries. Drop rounded tbsp of dough 2" apart on ungreased cookie sheet. Flatten slightly. Bake 10-14 min. Makes 48 cookies.

These are the BEST cookies!![/size]

This has nothing to do with Christmas but I just discovered it over the Thanksgiving holiday and loved it so much I thought I'd share!

Grape Salad

1 lb. white seedless grapes
1 lb. red seedless grapes
2 apples, chopped
1 (8 oz.) container philadelphia cream cheese
sour cream
3/4 cup sugar
l cup brown sugar
1 cup chopped nuts

Wash grapes and chop apples into bite size pieces. Mix cream cheese, sour cream and sugar until smooth and pour over fruit. Chill overnight.

Mix brown sugar and nuts together well, then sprinkle over top of fruit. Let set at least 2 hours.

[size=7]I'm always looking for recipes that contain oranges, I have a mini grove of nine trees and have them almost year long. This is great to make mini- loaves to gives as gifts.

Zesty Orange Bread

Zest of 3 oranges
1/2 cup sugar
2 Tbs. water
5 Tbs. unsalted butter
2 cups all-purpose flour
1 1/4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 eggs
3/4 cup plain yogurt
3/4 cup milk

For the orange syrup:
3 Tbs. sugar
3 Tbs. fresh orange juice

Preheat an oven to 350ºF. Grease and flour a 1-lb. loaf pan.

In a small saucepan over medium heat, combine the orange zest, 1/4 cup of the sugar and the water, stirring until the sugar dissolves, about 2 minutes. Add the butter and stir until melted, about 1 minute. Set aside.

In a bowl, stir and toss together the flour, baking powder, baking soda, salt and the remaining 1/4 cup sugar. Set aside.

In a large bowl, whisk together the eggs, yogurt, milk and reserved orange mixture until smooth. Add the flour mixture and stir until just blended.

Spoon the batter into the prepared pan and bake until a toothpick inserted into the center of the loaf comes out clean, 50 to 60 minutes.

Meanwhile, make the orange syrup: In a small bowl, combine the sugar and orange juice. Set aside, stirring occasionally; dont worry if the sugar does not dissolve completely.

Remove the bread from the oven and transfer the pan to a wire rack. Using a fork, gently poke the top in several places. Stir the syrup, then slowly drizzle it over the hot bread. Let the bread cool in the pan for 15 minutes, then turn the loaf out onto the rack and let cool completely. Makes 1 loaf. [/size]

Terri - this orange candy recipe doesn't call for real oranges but it does taste just like a creamsicle. Caution though, it's very rich!



Creamsicle Fudge recipe

3 cups granulated sugar
3/4 cup (1 1/2 sticks) butter or margarine
2/3 cup cream
7 ounces Marshmallow Crème
1 (12 ounce) package vanilla chips
3 teaspoons orange flavoring
12 drops yellow food coloring
9 drops red food coloring

Put sugar, cream and butter or margarine into a heavy cooking pot. Boil until it reaches the soft ball stage on a candy thermometer, about 5 minutes. Add Marshmallow Crème and chips. Mix well. Remove 1 cup of mixture and set aside.

Add orange flavoring and food colorings to mixture in pot. Stir and pour into greased 11 x 8-inch or 13 x 9-inch dish. Stir white mixture and pour on top, then swirl with a knife. Chill to cool. Cut into whatever size you desire.

I'm going to post three of my favorite xmas cookies. Here's the first:

These are fun and people love them because you can't tell until you bite into them- you get a nice surprise of a chocolate kiss. This is an old recipe from my Hershey Make it Chocolate book- so you can now add varity by using different kinds of kisses:

[size=7]Cocoa KISS Cookies[/size]


1 cup butter or margarine, softener
2/3 cup sugar
1 teaspoon vanilla extract
1 2/3 cups all-purpose flour
1/4 cup HERSHEY's cocoa (any cocoa is good)
1 cup finely chopped pecans

54 HERSHEY's KISSES (one 9 oz pachage) unwrapped
Confectioner's sugar


In large mixer bowl cream butter, sugar & vanilla until light and fluffy.
Combine flour & cocoa in a separate bowl
blend into creamed mixture
Add nuts
beat at low speed until well blended

Chill dough 1 hour or until firm enough to handle

Heat oven to 375 degrees

Mold scant tablespoon of dough around each unwrapped KISS, covering KISS completely. You don't need to over-do it here because it's a very rich cookie

Shape into balls
place on ungreased cookie sheet
Bake 10-12 minutes or until set
Cool slightly
Remove from cookie sheet onto wire rack
Cool completely.
Roll in confectioner's sugar
Makes about 4 1/2 dozen cookies.

Another chocolate cookie- this is fun and different. It shows up chocolate and white from the confectioner's sugar- so it adds some varity to your xmas cookie plate:

Chocolate Crinkle Cookies

2 cups sugar
3/4 cup vegetable oil
3/4 cup HERSHEY's cocoa
4 eggs
2 teaspoons vanilla extract
2 1/3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoons salt
Confectioner's sugar

In large mixer bowl cmbine sugar and oil
Add cocoa
blend well
Beat in eggs (one at a time) and vanilla
In a separate bowl- combine flour, baking powder & salt
add to cocoa mixture; blending well
Cover; Chill at least 6 hours

Preheat oven to 350 degrees
Shape dough into 1 inch balls
Roll in confectioners sugar. Place 2 inches aprt on GREASED cookie sheet

Bake 12-14 minutes until almost no indentation remains when touched
Remove from cookie sheet; cool on wire rack
Makes about 4 dozen cookies.

Tip- if finger get stickey when rolling uncooked dough- dust fingers in confectioner's sugar.

Now this one is one my request list every year- people love this brittle and it's really easy to make. This one comes from my Mrs Fields Cookie Book:

Macadamia Nut Brittle

1 1/2 cups (9oz) whole macadamia nuts
6 Tablespoons salted butter
1 cup sugar
1/4 cup water
1/4 teaspoon baking soda
1 teaspoon pure vanilla extract

Lightly grease a 9 x 13 inch glass baking dish (ok - the size isn't that important-but glass is. The smaller the baking dish-the thicker the brittle) Equally distribute macadamia nute over bottom of dish Set aside/

In a heavy 2 quart saucepan, combine butter, sugar & water.
Place over medium heat & stir with a wooden spoon until sugar dissolves. Let pan stand covered for 2 minutes.

Uncover pan & increase heat to high. Continue cooking without stirring until mixture begins to turn a golden brown.
Quickly remove from heat; stir in baking soda & vanilla extract.
Pour immediately over macadamia nutes in prepared baking dish.
Spread with a wodden spoon.

Cool to room temperature. Break into irregular-sized pieces. Store in an airtight container.

Turn on the electric mixer...Beat one cup of butter in a large fluffy bowl.
Add one teaspoon of sugar...Beat again.

At this point it's best to make sure the Cuervo is still OK, try another
cup. Just in case. Turn off the mixerer thingy. Break 2 leggs and add to the
bowl and chuck in the cup of dried fruit. Pick the frigging fruit off
floor... Mix on the turner. If the fried druit gets stuck in the beaterers
just pry it loose with a drewscriver. Sample the Cuervo to check for
tonsisticity.

Next, sift two cups of salt, or something. Who giveshz a sheet. Check the
Jose Cuervo. Now shift the lemon juice and strain your nuts. Add one table.
Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven.
Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat
off the turner. Finally, throw the whole bamn dowl through the window,
finish the Cose Juervo and make sure to put the stove in the dishwasher.

Mary -- the macadamia nut brittle sounds delicious. I think I might try that this year.


Now, my recipe. These are really easy and made without eggs. These cookies have been brought to cookie exchanges and they' re good.

Whole Wheat Crisps

1 cup wholewheat flour
1/2 cup cornstarch
1/2 cup powdered sugar, plus some additional for sprinkling
3/4 cup softened butter
1 teaspoon vanilla

Mix all ingredients and roll into a large ball. Scoop by tablespoons and roll into individual cookie size balls. Place 2 inches apart on an ungreased cookie sheet. Press cookies down with a fork (i.e. peanut butter cookies) and sprinkle with additional powdered sugar.

Bake in preheated 325 degree oven for 25-30 minutes.

To Die For Cookies

24 Ritz crackers
1/2 to 1 cup crunchy peanut butter
10-12 ounces dark chocolate or white chocolate coating icing

1. Spread one side of half of the crackers with peanut butter. Top each with second cracker to make a "sandwich."

2. Melt chocolate in a double boiler

3. Dip half of each cracker sandwich into melted chocolate and place on waxed paper to harden. Then dip the other half of each cracker sandwich into chocolate.

MAPLE WALNUT FUDGE

INGREDIENTS
2 cups white sugar
1 cup evaporated milk
3 tablespoons butter
3 cups miniature marshmallows
3 cups white chocolate chips
1 cup chopped walnuts
2 1/2 teaspoons maple flavored extract
50 walnut halves
DIRECTIONS
In a medium saucepan over medium heat, combine sugar, evaporated milk and butter. Bring to a boil and let roll 5 minutes. Remove from heat and quickly stir in marshmallows, white chocolate, chopped walnuts and maple flavoring. Spread in a 9x13 inch dish. Top with large walnut pieces, evenly spaced. Chill 8 hours or overnight. To serve, cut around large walnuts.

2 cups Vanilla Wafers, crushed
3/4 cup grated coconut
3/4 cup powdered sugar
1/2 cup orange juice concentrate, thawed

Mix the dry ingredients together, and then add the oj. Make teaspoon size balls, and roll in additional powdered sugar. (It helps to rub some butter on your hands before rolling the balls.) Place in an airtight container and chill overnight.

2 cups mini marshmallows
2 cups graham cracker crumbs
1/2 cup each red and green cherries
1 can condensed milk
1/2 cup pecans or walnuts chopped

Combine marshmallows, crumbs, cherries, milk and nuts. Shape into 60 balls about 1in diameter. Place in a single layer in shallow pan. Cover and chill several hours. Store in tightly covered container in fridge.[/size]
